Citrus scented veal Product Of Emilia-Romagna

Ingredients

  • 400g of Cirio passata Rustica
  • 500g veal
  • 1/2 stick of celery
  • 1 carrot
  • 1/2 lemon
  • 1/2 orange
  • 50g parsley
  • 200ml white wine
  • 500ml meat stock
  • extra virgin olive oil
  • 1 garlic glove
  • Flour for dusting the veal
  • Salt
  • Black pepper

Preparation

  1. Cut the veal meat into 5 slices, dust with flour and brown them in hot oil aromatised with the garlic. 
  2. Remove the garlic and add the finely chopped vegetables. pour over the wine, let it evaporate and transfer to a pan. 
  3. Add the passata, stock, salt and pepper to taste and cover with foil; bake at 180 degrees for 1 hour and 30 minutes. 
  4. Cut the peel from the citrus fruit and finely chop together with the parsley. 
  5. When serving, reduce the cooking sauce and serve sprinkled with the chopped citrus fruit.
